Earth is an upscale restaurant offering a contemporary American menu specializing in organic food. That is, the owner, Barry Bursak, tries (as much as is possible in Chicago) to use organically grown produce and meats. That's why they usually have buffalo, but not beef. They also have organic wines, and the place was constructed with environment-friendly materials. You can read some more about it here: http://www.voyager.net/intheloop/newsstand/booster/041598/EARTH.html Earth 312/335-5475 Fax: 312/335-5460 738 N.
