Hong Min on 22nd in Chinatown has wonderful "Chow Foon" dishes. Most anything can be ordered with the noodles instead of rice (despite the handful of chow foon dishes on the menu) The noodles range in texture from crispy to soft all in the same dish. My favorites are the Filet of Pike with vegetable delight chow foon, and the roast duck with asparagus chow foon, neither of which you will find on the menu!
