In Kailua-Kona on the Big Island, try the Ranch House (I think that's the complete name of the restaurant). Anyway, when you get to the restaurant it has two "sides". One is a western BBQ type sitting, the other is like sitting in a Hawaiian house with table cloths etc. The prices are the same on both sides and the food is good.

In Waikiki, the best food (by MILES) can be found at the Halekulani Hotel. The Halekulani is one of the finest hotels on the island, and if I could only have one meal before I died, it would be the Sunday Brunch at ORCHIDS. (reservations waaaaaay in advance). Orchids is located on the first floor of the hotel, looking out at the ocean, and (upon request) if you sit outdoors you can see Diamond Head, too. If you have lunch at the hotel, eat a Halekulani Burger at House Without a Key (next to Orchids, by the pool). Either way, save your pennies, because they're expensive meals......and make sure to order Po-Ha (I have no idea how to spell it, that's a phonetic) jam with your breads........

Well It's been a while but I'll try. Most of these are upscale a few down scale.

Brunch at the Hali Kalani (oahu)
The Third Floor (I think it's in the sheraton on oahu) The chinese restaurant at the Hilton Hawaiian village (oahu) Choco's (not sure of name, but it's a great japanese restaurant
with teppan cooking next to the Ilikai Hotel on oahu, lots
  of japanese in there eating).
Lots of little korean eateries around that are good! Don't miss Ala Moana (sp?) mall, there are eateries in there
and the japanese department store has a grocery store on the
top floor that sells take out sushi and other goodies. We went
nuts in there. Came home with 10 pairs of $1 lacquered chopsticks.
  :-).

Kauai:
The Masters and the Westin Hotel
A little restaurant in the hotel (japanese)

Maui: Most of the places in Lahina are pretty good and of course
      the Westin Hotel

Big Island: Third floor at the Mauna Lani
             Any restaurant at the Westin
The Bayon Tree in Kamuela ( I think that's it,
it's run by a former chef at the westin)

Merriman's in Waimea (excellent cusine using local produce), Cafe Pesto in Kawaihae (mostly pizza, but very unique and good), Palm Cafe in Kailua-Kona (excellent food), Huggo's in Kailua-Kona (excellent food and located on the ocean), Sam Choy's in Kailua-Kona (local Kona cusine - place is not much to look at but the food is great), Roussels in Hilo for New Orleans food (from an old New Orleans family), Harringtons in Hilo (good steak).

If you are interested in day trips on the island such as Mauna Kea, Volcanoes National Park, Green Sand Beach and historical sites, I am a geologist who runs day trips for groups of 2 to 6 people. Email me if you want descriptions of the trips.
