I warn you that Denver has many Indian restaurants, and you're facing lots of competition. One recent one, Moghul on 120th at Pecos, only lasted a couple of months, although they never dond the quality that the owner had achieved with the original Taj Mahal close to Westminster Mall ( that location is now Yak and Yeti). He also depended on Avaya business, and Avaya's been doing weekly layoffs. Denver seriously needs a Turkish restaurant, any way you might manage that?

That said, you ought to, if you haven't yet, try out the competition. People will say the best in town is India's, but the one to beat is Jewel of India at 104th & Federal. They do have a farily varied menu. For my wife and I, the presence of bindhi masala is critical, but they've tempted s away from that with their Shah Jahan. One thing that makes Jewel different is that they do everything well. Most Indian places either do tandooris well, nut not the curries, or the other way around. Jewel has always excelled in both. They used to be weak in their breads, but ince they changed ownership a year or two ago, that has been corrected. And they manage to do the most wonderful lunch buffets. Oh, and of course, make sure you have great chai.
