The Chart House in Monterey is excellent, and has a wonderful view, as well!

It's been awhile since I've been there, but The Fishwife at Asilomar (between Monterey and Carmel) is good, right on the water and last time I was there had better Key Lime Pie than in Florida.

The Sardine Factory in Monterey's Cannery Row is really nice. At dinner the glasshouse type of dining room in the back (they call this room the Atrium) has a really nice atmosphere, good food, good service.

I agree with Steve that La Boheme is a really fine restaurant, very good to excellent food, reasonably priced (~$20 including soup, salad, entree), limited, but well thought out and reasonably priced wine list. It does only serve one entree per night, and the food tends to be hearty rather than "exquisite". No reservations and there is frequently a long wait on Friday and Saturday nights (you can wait at a nearby bar if you like).

I've been told (by people I would believe) that The Fishwife in Asilomar is the best seafood place in Carmel/Monterey. Can't remember any "California" cuisine places that have been highly recommended.
