Giorgio's Pizza...

I did not see the original long list, but if you are talking San Jose area pizza, you have to add T-Bird's to the list. The sausage is a little less than perfect, but you can't have everything. We go to the one at Camden and Union, tho there is one SE of downtown Los Gatos.

If I want a pie like I could get any night of my life growing up

on the SW side of Chicago, I pretty much have to make it myself. It's funny because all the key ingredients are readily available locally: the incomparable 6-in-1 canned tomatoes, Neto's italian sausage (Italian sausage _must_ have fennel seeds, _never_ anise seeds), local part-skim mozzarella (sliced, not grated to provide that exquisite stringiness), and some grated hard cheese for interest (we use pecorino romano.)

And, although I hooted at it at first, a pizza stone _is_ necessary to keep the dough from getting soggy.

By the way, for other ex-Chicagoans who are pining away and keening, you can get a respectable Italian beef sandwich (with hot giardinera!) at By-the-Bucket on Stevens Creek. The next nearest outpost is Phoenix, Arizona (where they understand the words, "red sauce"), If any one knows of a closer one, let me know.

Best regards,
