I can recommend a very small deli in Tempe.  It is called In Season Deli and it offers home made pasta salads, vegetarian tamales, soups, etc.  They occasionally offer tuna salad but other than that it's strictly veggie. The food has always been excellent there, and the portions generous.  It's an eat outside sort of place, and located on Mill avenue right behind Changing Hands bookstore.  Try the strawberry honey lemonade.   You won't be sorry.

There's a great place in old-town Scottsdale that my wife and I really enjoy called Marche Gormet. Lots of vegetarian dishes! Also consult the "Phoenix" magazine. It has reviews from all over the valley.
