Grilled Mexican Corn (Elote) — from Averie S. (averiecooks.com) · handwritten page
Source: The In-Car Journal, written by my rider Averie S. (averiecooks.com)
Ingredients
1/4 cupmayonnaise
1/4 cupMexican crema (sour cream may be substituted), or as necessary for consistency
2 clovesgarlic, finely minced or pressed
vegetable oil, for brushing
6 earsfresh corn, husked and cleaned
1/2 cupcotija cheese, crumbled
fresh lime juice, from about 2 medium limes
chili powder, cayenne powder, and/or smoked paprika, for sprinkling as desired
fresh cilantro for garnishing, optional
Method
Preheat an outdoor grill to medium-high heat (or indoor grill pan).
To a medium bowl, add the mayo, crema, garlic, and stir to combine. If your mixture is very thick, add a couple more tablespoons of crema to taste; set mixture aside.
Brush grill grates with oil, add the corn to the grill, and cook for about 8 to 10 minutes, or until corn is as cooked as desired; rotate corn a quarter turn every couple of minutes to ensure even cooking.
Remove corn from grill, evenly brush all ears with the mayo-crema mixture (I brush very liberally; if you don’t you will likely have some left over)
Either sprinkle with the cheese or add the cheese to a shallow bowl and dredge the corn through the cheese.
Evenly squirt with lime juice and sprinkle with chili powder, cayenne powder, and/or smoked paprika, to taste.
Optionally garnish with cilantro and serve immediately.
Shared by my rider Averie S. (averiecooks.com).
Notes: Corn is best warm and fresh but extra can be cut off the ears with a sharp knife and stored airtight in a bowl in the fridge for up to 5 days.
“I love grilled corn and have fond memories of walking on the Malecon in Puerto Vallarta eating freshly grilled corn from the street vendors. Elote is grilled Mexican street corn that has been brushed with a mixture of mayonnaise, Mexican crema (or sour cream), topped with cotija cheese, and sprinkled with either chili powder, cayenne powder, or smoked paprika, before adding lime juice and fresh cilantro.
It’s a flavor explosion in your mouth. Because I like spicy foods, I add either a generous dose of chili powder or a more reserved amount of cayenne pepper. Smoked paprika is also great.
The mayo and Mexican crema mixture is so creamy and tempers some of the heat if you’re a heat-seeker like me.
The cotija cheese is salty (I don’t find the need to add any additional salt to the recipe), and along with the finishing squirt of lime juice which adds a lovely tanginess, they are both great flavor contrasts to the naturally sweet corn.”

Grilled Mexican Street Corn — from Alyssa R. (therecipecritic.com) · handwritten page
Grilled Mexican Street Corn
Recipe
8 ingredients
Source: The In-Car Journal, written by my rider Alyssa R. (therecipecritic.com)
Ingredients
Corn: Choose the freshest corn for the best results!
Mayonnaise: Creamy base that holds all the delicious flavor.
Sour cream: Mix together with the mayonnaise and seasoning mixture.
Cilantro: Freshly chopped and mixed together with creamy sauce.
Parmesan: Freshly grated parmesan gives a great salty, nutty flavor.
Lime: Lime juice from 2 limes adds a fresh tangy flavor.
Red chili powder: Add according to your spice preference.
2Limes: cut into wedges for garnish.
Method
Prepare the Corn: Remove the husks of the corn, leaving the core attached.
Grill: Place the corn on a hot grill turning once. Or use a cast iron pan until it starts to get slightly charred.
Make the dressing: In a small bowl, mix the mayonnaise, sour cream, and cilantro.
Brush corn with dressing: Remove the corn from the grill and slather with the mayonnaise mix. Squeeze the lime juice over the corn and generously sprinkle with parmesan and cotija cheese. Sprinkle with chili powder. Serve immediately.
Shared by my rider Alyssa R. (therecipecritic.com).
Variations: There are many versions of Mexican Street Corn floating around. Here are some ideas for taking this tried and true grilled corn recipe and making it your own!
Make it into a Salsa: Cutting the corn off the cob once it is grilled, then mix it with the mayonnaise sauce in a bowl. Serve with chips.
Cook it in the Oven: Don’t let rainy days or cooler weather stop you from enjoying this amazing corn! Make in the oven or on a stovetop skillet instead. To prepare in the oven, you will heat your oven to 425 degrees Fahrenheit. Then, spray the corn with cooking spray or slather it with butter or oil. Finally, wrap in foil and cook for 20-25 minutes.
Cook Corn on a Skillet: To use a skillet (I recommend using cast iron), heat your pan to medium-high and turn corn occasionally until it is grilled on all sides.
Mexican Crema: Use in place of sour cream. It is similar to sour cream, just a little thinner and saltier.
Cotija Cheese: An authentic Mexican cheese that can be used in place of parmesan cheese for an even more authentic dish.
“When you are looking for the best corn to use for Mexican street corn, you will want to look for corn that has a bright green husk with no small brown holes in it. The holes could mean insects, so you want to avoid those! The tassel at the top of the corn should be a little bit sticky and a light brown color. Do not pull back on the stalks to check the corn kernels because that will shorten the life span of the corn. Instead, smell for a sweet corn smell and squeeze to make sure the corn is firm and not missing kernels.”
