Chicken Soup
Chicken Soup
Recipe
Source: Margie's recipe file
Method
The best way to make the "real" broth is to use a large kosher stewing chicken! They are tough so they have a strong flavor and can be simmered for a long time and still be good for chicken salad or for cutting up for the soup.
Cover it with water (about a quart) in large soup pan. You need 1 bunch of carrots, 3 onions, package of celery with lots of leaves, parsnips, Italian parsley, dill, ginger, and about 1 T of sugar, salt and white pepper to taste. - Divide the veggies into three parts. Add one third and when it gets soft, remove with slotted spoon and add more. You can add it all at once but you get better flavor by this method and you can keep the last bunch crispier and let it stay in the soup (cut up)
The amounts go by how much you want to make so you have to experiment. If it is for a crowd you may need more than one chicken. I use backs, necks or wings and sometimes another small chicken (cut up) in addition to the stewing chicken.
Simmer the soup on a very low light for about an hour. The chicken should be soft. Then taste, and remember, the longer it sits the better the flavor so it definitely should be done at least one day before and can be frozen for weeks (It actually improves from freezing)
But first remove the chicken and veggies and chill. This enables you to get all the fat off the top. Then put the stuff back and chill again or freeze. When it cools in the refrigerator, it should be like a gel.
For a "Chicken in the Pot" supper----- Cut up the chicken, add noodles, kasha, kreplach, or matzoh balls and fresh veggies!
Sometimes my mother used to mash all the veggies and put them back in the soup. It gives a thicker look (not like clear broth) but tastes delicious.

Osso Buco

Ingredients
3 lbsveal shanks (or lamb)
3-4 tblspextra virgin olive oil
2 tblspbutter
1red onion, coarsely chopped
½green bell pepper, coarsely chopped
½red bell pepper, coarsely chopped
3carrots, peeled and coarsely chopped
1 large stalkcelery, coarsely chopped
5-6 clovesgarlic, thinly sliced
1/3 cupMarsala wine (or dry sherry)
1/3 cupbrandy
1 tblspbalsamic vinegar
2 tblsptomato paste
1 sprigrosemary
4 sprigsthyme
2bay leaves
2 cupschicken broth (veal or beef stock can be substituted)
GREMOLATA:
2 tblspchopped Italian parsley
1 clovegarlic, minced
½ tspgrated lemon peel
1 tblsplemon juice
Method
Mix in a bowl and reserve to sprinkle over individual servings.
In a large skillet or Dutch oven with a tight fitting lid, add 2 T olive oil over medium high heat. Season shanks with salt and pepper on both sides, then brown them on all sides. When browning is done, remove shanks to a bowl to be added back in later.
In the same pan, reduce heat to low and add 2 T olive oil and butter. Add the onions, peppers, carrots, celery and garlic. Stir well to coat, then cover. Simmer, stirring occasionally, for about 10 minutes. This will allow the vegetables to release their juices.
Add the Marsala or sherry and the brandy, also the balsamic vinegar. Stir in well, cover again, and let simmer on low for about 6-8 minutes.
Make a "bouquet garni" out of the rosemary, thyme and bay leaves. (Wrap them in cheese cloth and tie with cooking twine). Add this to the simmering vegetables, along with the tomato paste. Increase heat to medium-high and add the shanks and chicken, veal or beef stock. Stir both in well to mix with vegetables.
When broth is boiling, reduce heat to low again and cover. Cook for about 1-1½ hours. Veal should be "falling off the bone" tender after an hour or less. Lamb or beef might take a full hour and a half to reach maximum tenderness. Falling off the bone is probably not going to happen with lamb or beef, but the meat should be very tasty and quite tender.
Garnish with gremolata, and serve the osso buco with the above-mentioned risotto, or with creamy mashed potatoes.
In keeping with true gourmet cooking, here are a couple of variations for you:
1. Add either a 14 oz. or 28 oz can of diced tomatoes at the point you add the Marsala and the brandy.
2. At the end of cooking, mix 1 cup of sour cream with 1 T of flour. Stir into the osso buco and remove from the heat. (This would give you a German version. Call it German Veal Shank Stew!)

Method
Buy single cut (first cut)-about 4 to 6 lbs. --- You need a roaster with a tight cover.
First cut up about five onions and caramelize in oil by simmering SLOWLY till nice and brown but not black. You can do this in the roaster or in a separate frying pan. Put in about 5 cloves of garlic toward the end.
Make a mixture of flour (about 4 or 5 Tbsp) cloves and ginger -Approx. two T each and pound into the meat. You should not be able to know the seasonings -just the aroma-- Then sear it quickly in roaster over very high heat till brown (Only about five minutes)-Cover with the onion and garlic mixture. Then mix one bottle of Heinz chili sauce with two bottles of water (the sauce bottle) and one cup of wine or beer. (optional), 1 T Br. Sugar(also optional)
The liquid should be about an inch high or half way up the brisket.
Cover and cook in oven at low temperature - 325 degrees for about two hours. Then test with fork for tenderness.. It should go through easily and don't worry - you can not overcook it.
When tender remove the meat from the pan , wrap in foil and cool in fridge before slicing.
Pour the gravy into the dish that you will use for serving it (usually a 9x13 pan) , cover and refrigerate so that the fat comes to the top. Better the second day.
Skim the fat off the gravy.. Let the meat sit out for a while -then slice thinly ACROSS the grain, You should not see the lines of the grain at all. - Lay the slices into the gravy and voila-you are already !
You can refrigerate or freeze and then reheat about 40 minutes before serving. -You can't miss!
To make a one dish meal you can add potatoes, beans etc. but otherwise I like it plain with kasha varnishke or noodle pudding. Evie M. always made apple sauce.
Remember, this is a pot roast so you can use chuck instead of brisket.
And if you want another really simple way you can make Jan's which is to Place brisket on heavy foil (dull side) Add 1 box (two envelopes) of dry onion soup and 1/½ can whole cranberries. Wrap tightly and put in oven for same time. Open carefully as it should make its own juice. Let cool and slice as above. I haven't done this but she says it is great!

canned peaches (medium) cut up---without juice (Sometimes I put a few Table spoons)

You can adjust amount of sugar by tasting.---
** If you want it more fluffy you can separate the eggs and beat the whites. Then mix the yolks into the mixture but fold the beaten egg whites in last. I have never tried this but I know it is done.
Another little touch is to add grated lemon rind or zest if you have it
