About the book
The book opens with the family story. George's father ran the Legal Cash Market in Cambridge in the early 1900s. George and Harriet opened their first restaurant with 3 employees: the 2 of them and a man who fried fish. 20 years later there were 6 restaurants and a payroll of more than 1,000.
The rule of the house runs through every chapter: start with fresh fish, cook it simply, and don't overcook it. The first half teaches how to judge freshness, which fish can stand in for which, and every basic method. The second half is the recipes, arranged fish by fish, then shellfish by shellfish.
Many of the dishes are the ones served in the restaurants: the clam chowder, the Inaugural Fish Chowder, Onion Strings, the tartar sauce, and the Grape-Nut Custard.
Chapters
- 1The Legal Sea Foods Traditionpage 1
How the Berkowitz family went from the Legal Cash Market, a meat market and grocery on Inman Square in Cambridge, to 6 restaurants serving about 8,000 customers a day. The shop took its name from the Legal trading stamps given out with groceries.
- 2Why Fish Is Good for Youpage 9
George Berkowitz admits he never ate fish until he was about 25. This chapter covers the health case for fish, read before publication by a Harvard Medical School associate professor.
- 3Selecting Fishpage 15
The first rule: buy fresh fish and cook it the same day. Because fish has no government grading like meat, freshness depends on how it is handled from boat to counter, and this chapter shows how to judge it.
- 4Catch of the Seapage 21
A guide to the fish at the counter, from bass and bluefish to cusk, pollock and wolffish, and how to swap a cheaper fish for a familiar one by matching texture.
- 5Basic Techniques for Cooking Fishpage 37
Baking, broiling, frying, grilling, poaching, sauteing and steaming, plus cutting and filleting. The point: care in cooking matters more than the method.
- 6Our Favorite Fish Recipespage 55
The heart of the book, arranged fish by fish. Most recipes take less than half an hour.
- 7Shellfishpage 103
Clams, crabs, lobsters, mussels, oysters, scallops, shrimp and squid: how to buy, clean and cook them, and a home clambake. The restaurants served almost 4,000 pounds of shrimp a week.
- 8Shellfish Recipespage 127
Starts with the clam chowder the restaurants sold at about 700 gallons a week, then works through every shellfish.
- 9A Melange of Soups, Salads, and Basic Recipespage 155
The Inaugural Fish Chowder, Onion Strings, tartar sauce, the corn-flour frying mix, the cracker-crumb topping, fish stock, and the desserts, including Grape-Nut Custard and Gingerbread with Fresh Applesauce.
