Pave~ on Colby St in Everett, WA. has it all... Hand-made French-oven baked breads that are truly works of art...delightful things like rosemary-raisin, potato(with whole chunks of red potato, peel and all), thai, artichoke heart, dried cherry, hazelnut and all the standard sourdoughs, dark ryes, etc. all set out on tall wooden racks. They also bake exquisite desserts, scones, muffins and cookies and, of course, espresso. All are the owner/head baker's creations. They serve light breakfasts/lunches in the bistro style. Sidewalk seating when the weather's good. Lots of newspapers lying around and a bulletin board...these are the things that make a perfect bakery/restaurant. Naturally, it must be downtown (and next door to one of the best kept secret sources for vintage electric guitars in the country is an added bonus :-) )

And one more. If you ever find yourself in Mettaline Falls, WA you'll know why I don't find it necessary to dig up the name of this place. Its greatness was its owner/baker...who also happens to be the town's medicine woman. It was comforting to see her dust some of the flour off her hands, reach over her counter to take the baby being handed to her, inspect its little chest and tell the concerned young mother that its "only a heat rash. A little cornstarch will fix her right up.", hand the baby back and dive back into the bread dough. A simple act in a lunatic world.
