Most of my picks are in the Washington, D.C. area, but here goes:
1. Inn at Little Washington, Washington, VA
2. 21 Club, New York, NY
3. Maison Chandon, Napa Valley, CA
4. Cafe Bethesda, Bethesda, MD
5. Mama Nina's, Yountville, CA
6. L'Auberge Chex Framcoise, Great Falls, VA
7. Gandy Dancer, Ann Arbor, MI
8. Four and Twenty Blackbirds, Massey Corner, VA
9. Kuleto's, Burlingame, CA
10. Il Borgo, McLean, VA

(The above restaurants are in no rank order, though I would definitely put the Inn at Little Washington on the top.)

Finally, a reasonably on-target list...some of the other ones in this thread are scary (Chasens? The 21 Club????? let alone Fishbones in Detroit...)

However, I don't think Susanna Foos belongs on here...it's good but not that good.

Here's my .02 worth, not listed in strict priority, but vaguely so:

1. The Inn at Castle Hill, Newport, RI

2. A la Table de Serge Bruyere, Quebec City. I lied, I guess -- this is
the finest restaurant I've been to in my life, and I've been to a lot
of them throughout the US and Europe. It should be #1 (on my list,
anyway) but I'm too lazy to retype.

3. The Jockey Club, London

4. Old Europe, Wash DC (German)

5. The Prime Rib, Wash DC (Ya gotta like beef)

6. The Warehouse, Old Town Alexandria, Va

7. Matuba, Arlington, Va (Japanese)

8. Any of many restaurants in Paris, Quebec City, Chicago, Washington, and other places whose names I can't remember, but who are surely responsible for driving my cholesterol count into four digit readings.

The criteria for my list, by the way, is a very ill-defined integration of ambiance, service, price, and maybe even view, but the key factor is always quality of the served product.

How about a little more info on this one, Dave?

>4. Old Europe, Wash DC (German)

This one was a joke, right, Dave? Has Germany been included in your travels? IMO, atmosphere - yes, food - definitely no. A *good* German restaurant must offer top-quality veal, and Old Europe doesn't.

Ah-hah! Now we've got your Old Town favorite!

This is fine, but I don't see how it justifies inclusion of the Old Europe. I like to go there too (and Wurzburg Haus, and Alpenhaus, etc), but I can't regard it as top-notch. I can see it as a favorite based on the other factors you mention, but not as a top-10 recommendation based on food quality.
