I've had some great Ramen for lunch at the Genji in Falls Church. It seemed fresh, or at least reasonably so. I've always been pleased with their food, and since it didn't appear to have been modified in any noticable ways to make it more appealing to American tastes, I'd guess that it was pretty close to an authentic traditional style.

Good ramen (not instant) shop in DC/No VA?

You might try the restaurant next to the Daruma Japanese store on Rockville Pike. I forget if the restaurant is also called Daruma or something else, but there's a Japanese bookstore on the other side.
Anyway they serve authentic Japanese "coffee shop" food like curry rice, omurice (rice omelet), mitsumame, even shaved ice with green tea! If you've lived in Japan, you'll recognize everything. Service can be slow though, so don't be in too much of a hurry.
