My favourite is Hokkai, in Soho (Brewer St?). It's quite traditional, reasonably priced and has great atmosphere and great food (there's hardly any westerners in there whenever I go in and they always seem to have hamachi which a lot of sushi places here don't often have... unfortunately!).

Ikkyu in Soho (in the little Chinese square just off Charing X Rd) is also quite good and is reasonably priced. It has a 'standard' sushi bar as well as a restaurant area.

Defun's, off Baker St, is OK for quality but way overpriced. There's another one off Baker St that's equally expensive (if not more so).

Some more recommendations:

Moshi Moshi Sushi in Liverpool Street Station or at Limeburner Lane is very good and are very reasonably priced. The Limeburner Lane bar is my regular and it is only that because I like it.

The Japanese Garden down Marylebone High Street is pretty good - the best sashimi I have had was from there. However, the other branch at The Angel didn`t impress me so I can't suggest you blow the sushi budget there!
