Good for you and your accurate response! The Pappadeaux restaurants are extremely good and popular in Houston, which of course lies within the whole Cajun/Gulf seafood orbit. And Pappasito's are among the best Tex-Mex joints on Earth, coming from Houston. That they're run by Greeks has to indicate how serious they are.

At Pappadeaux's I've enjoyed their jalapeno-stuffed Gulf shrimp, with fresh chiles chopped and tumbled with cheese and stuffed into enormous shrimp, then broiled. Pappasito's has gigantic tamales from which big chunks of pork tumble out as you cut in with your fork.

I hope they do well here. The Tex-Mex joint certainly would prosper -- who ever heard of a Mexican restaurant that didn't, especially in the suburbs? But the Cajun craze may have peaked here, unlike Houston, where the Cajun style is a fact of life.

By the way, sprawling Houston is a dining paradise, with every foreign cuisine imaginable, plus Texas steaks and BBQ, straight Mexican and Tex-Mex, the aforementioned Cajun, and the best seafood between the coasts!
