Well, I'll bite...though I must confess to not having been to California in almost 10 years. So this is a California-less list. No particular order: 1. Bouley, NYC 2. Biba, Boston 3. Magnolia Grill, Durham, NC 4. Bacchanalia, Atlanta 5. Le Francais, Wheeling, IL 6. Topolobampo, Chicago 7. Vincent at Camelback, Phoenix 8. Crook's Corner, Chapel Hill, NC 9. Union Square Cafe, NYC 10. Elizabeth's on 37th, Savannah Every one is a terrific, sure-fire great meal. I'm sure Inn at Little Washington is as great as voters here say; I've never had the pleasure. Also high on my list (next time I'm in Calif.) are Chez Panisse and Green's (the world's greatest vegetarian gourmet eatery).
