We have stayed in several that might fit your needs. 1) Beekman Arms in Rhinebeck offers lovely rooms and widely acclaimed dining room. We loved our room and breakfast, but were not overwhelmed with dinner. 2) Inn at the Falls in Poughkeepsie combined with dinner at the Culinary Institute of America in Hyde Park is a great evening; the room and breakfast at the Inn were excellent, and assuming that you don't mind planning your party in a "cooking school" ;-), dinners at both American Bounty and Caterina de Medici have been outstanding. (Very advanced reservations are necessary at the Institute.) 3) and my choice for an intimate weekend, Le Chambord in Hopewell Junction. Rooms here are lovely; breakfast was excellent. We did not have dinner here, but at the time it was said to be quite good. I was very impressed with the service here, e.g., I woke up very early (5am?) and not wanting to wake up my husband, quietly dressed and went downstairs with a book. The captain on duty in the dining room saw me, and insisted that I come into the cheery dining room where he plied me with juice and coffee, frequently asking if I didn't want anything else, anything to make sure that I was comfortable and content.

These stays were a couple of years ago. Perhaps people with very current experience with these places can critique these suggestions.

In addition to the other suggestions (I understand that brunch at the Beekman Arms is excellent), I would add Crabtree's Kittle House in Chappaqua (Westchester). It's not quite as far away as the other suggestions (maybe an hour from Manhattan), but dinner is excellent and they do have rooms available. From what I have heard, however, their breakfast is nothing very exciting.
