Cafe, The Shed, etc.) are pretty inexpensive.
Among my favorites of inexpensive or good value restaurants:
1. Cafe Atalaya (on Guadalupe St): Mediterrean/Calif cusine; breakfast, lunch,
and dinner. Fantastic bread, teriffic soups.
2. Whistling Moon (on Guadalupe St): Mediterrean/Moroccan/Greek/etc. cuisine;
very good pizzas, miserable wine list.
3. Cafe Cassis (on Water St): Mediterrean/Bistro food. Very good wood-fired
  oven pizzas.
4. Il Vicino (on San Francisco St): Best (wood-fired oven) pizzas in SF.
5. Natural Cafe (on Cerrillos Rd): natural, organic foods
6. Wild Oats Takeout (on St. Francis & on St. Michaels): not a restaurant but
can eat natural food deli fare very cheaply.
7. Tesueque Village Market (in Tesuque): leans more towards New Mexican food

Haven't tried yet, but expect to be quite good:
1. Cafe Adiammo (on Garfield St of Guadalupe): mostly pastas
2. Cafe del Mar (on St. Michaels just off St.Francis): the only SF restaurant
  specializing in seafood.

For a bit more money but very good value:
1. Paul's of Santa Fe (on Marcy St): Calif cuisine w/ a Southwest slant.
2. Cafe Escalera: you can eat from their bar menu and get the same great
Escalera food pretty reasonably. Fantastic soup and bread.
