I haven't been there in a number of years, but when I lived there, no one could beat Jerry's in East Rutherford for quality.  Not a fancy place and quite pricey, but the highest in quality.

My personal favorite is Tasauros on Broadway Pt Pleasant NJ.

Jimmy's is a greqat standby, near the Monmouth Track (I think)

Actually there's a ton of great Italian in N. Jersey.
