Sahara has a nice $3.99 buffett breakfast - cook-to-order eggs/omlette, and all the usual stuff.

Stardust's buffett is also nice. Toucan Harry's serves "eggs Rothchild"
- like eggs Benedict, but with filet mignon instead of ham. It is great when you are on a comp.

Tropicana Sunday buffett - unbelievable meal with sushi, filet mignon, eggs, pancakes, salmon, champagne, etc. etc. - costs about $25 but worth if you are hungry and want to splurge on a great buffett

If you don't care about cost, I recommend two places for breakfast in Las Vegas. First, the champagne brunch at the Tropicanca is excellent - good quality champagne, eggs to order, antipasto, caviar, bagels, fresh waffles made to order, pastries, etc. Second, on weekends, the Mirage opens Kokomo's, their seafood place, for breakfast. Excellent fritattas, fruit plates, eggs Benedict, etc. They have gourmet coffees available, brewed at your table in French press pots. The setting (inside the rain forest area) and the service were excellent. Not cheap though.
