On the strip, try Chevys in the Polo Towers Shopping Center or the Coyote Cafe in the MGM (Although this is a bit pricy).  Off the strip try Alberto's on Charleston West of the Red Rocks Theatre (at the intersection of Lindell and Charleston).

The Mexican Restaurant in the Palace Station is excellent.  Make a reservation!!

Hit a great Mexican restaurant at the LV Hilton while waiting foor "Starlight Express".  I forget the name tho, but BIG place off the main entrance.  Make it an evening with dinner & the show!
