We've always been happy at Chin's, an upscale nouveau-Chinese place, now in the Fashion Square Mall (IB).

I've eaten there almost every trip to Vegas for, hmm, 15 years or more, & never been disappointed. I usually go for seafood dishes.

Bon appetit!

Bellagio has a great buffet - lots of seafood etc. - around $25; also Rio has a good buffet - around $20.

Oh boy, where to start.

Z-Tejas SW cuisine
Osaka Japanese
Thia Spice - have the catfish, great stuff.
Rio Buffet is huge
Yole's - Brizilian LOTS of meat on swords, very good.

Here are my favorites:

Yolie's Brazilian Steak House --- a major meat eating experience Sam Woo Chinese Barbecue --- as good a Chinese restaurant as I've ever eaten in. Crowd is mostly Chinese, and no credit cards.

On last trip I had excellent meals at Emeril's New Orleans Fish House (in the MGM Grand) and Moongate (in the Mirage). We also had and excellent meal in the regular seafood restaurant (not the buffet) in the Rio.

For breakfast we like to go to the Stage Deli in the Forum Shops at Caesar's Palace. Not quite as good as NYC, but almost.

FYI, some of these restaurants were found by using the new Zagat guide -- recommend you obtain one.
