Two of the best locally owned places IMHO (and also slightly cheaper than the others I'll mention) are The Charcoal House on Manchester Road (about 8 miles west of downtown) and Andria's in Fairview Heights, IL (about 10-15 miles east). Andria's is in an old farmhouse, quite quaint, special sauce for grilling. (Also, from what I've heard, expanding, so maybe the quaint shtik will disappear. Andria's has a sister [brother?] restaurant called Sam's on Gravois at Laclede Station, probably 8-10 miles from downtown; I haven't been there so I can't comment.)

On the very high end, we have branches of both Morton's of Chicago and Ruth's Chris; a tad cheaper, there are also two locations of Dierdorf and Hart's, run by the newly inducted Football Hall-of-Famer and his erstwhile quarterback. Al's downtown is very Victorian bordello and simply brings you a tray of cuts and says "which one you want, how you want it cooked?". For a massive prime rib, there's an old-line place called Kreis' (pronounced like "Chris'") on Lindbergh near Olive.

One tangential recommendation -- a newer place called Joseph's downtown recently served me a really special huge filet with gorgonzola and pine nuts. Slightly pricey by St. Louis standards ($25) but excellent.

This is a great suggestion, and actually, you needn't compromise. Andy (at Riddles) does some really incredible things with beef himself. Have the grilled, chilled tenderloin with remoulade sauce as an appetizer and then follow up with a Steak Delmar. And that enormous wine list includes a dozen or so by the glass -- have a great big red with both courses, and finish up with an order of Bananas Foster. Fabulous!

I once ate a steak at Riddle's - it was served with a red wone sauce that was truly divine. And the side dish were awesome garlic potatoes (sliced, and in a cheesy sauce). I recommend this restaurant for steak or anything else!!! Especially dessert.
