Sostanza -for their chicken breast-even though everyone thinks that you should have steak thereno reservations- you will stand outside- Chibrea (sp.?) This is a very fine resturant but slightly more formal than the other two.. Florence, Italy Restuarants

Il Cibreo: Very high energy place with excellent, inventive dishes, a superb and opinionated chef, and first rate service -- both food and wine. We had two delicious dinners there about three weeks ago.
La Baraonda: very small (maybe eight tables) place serving simple but delicious fare. We found it a real treat at lunch.

Buca di Lapi..wonderful food, wonderful ambience.
And there are particular dishes you can get in many places that are classic cucina fiorentina...florentine specialities. If you like steak, the bisteca fiorentina is like no other steak in the world...except that I haven't tried the Japanese steak that costs $100 a pound and is fed solely on something very special...(steak that costs $50 a pound?) I've heard that is the best steak to be had. But barring that, the bisteca fiorentina is a marvel. Also I highly recomment zuccotto, another typically florentine dish... a beautiful little dome of gelati, cake, brandy.
Also, do you like truffles? There's a wonderful restaurant whose name escapes me, very serene and elegant...right up at the top of the Michelin guide, in the central part of town... that serves the white truffles of Piemonte...much better than the black French ones. They serve truffles (tartufi) as first course, shaved paper thin with butter and parmigiano over a plate of steaming arborio rice. Heavenly. Most fine restaurants should have them.
If by any chance you are renting a car, and will have it available in Firenze -- and if there is time before your October departure -- drop me a line and, if you like, I can tell you about a great place in the countryside.
Buon viaggo! And buon appetito!
Susan
[email removed]Probably the best (if there is such a thing) restaurant in Florence is La Loggia - it lies just above Piazzale Michelangelo. It is expensive but very very good. If you are not opposed to driving outside of town - let me know. There are number of very inexpensive trattoria that are excellent. There are just a little off the beaten path.
