Your salvation is a local pizza parlor. Meet the owner. Get to know the employees. Order *exactly what you like*.
Tomato sauce for pizza in a local parlor has no meat component (unless you want it that way). It is Italian Sauce (cooked longer) or Marinara Sauce (cooked less, solid chunks of tomato). The pie is generally slopped with olive oil before the sauce is applied, then the ingredients you ordered, then the cheese.
The smaller, the older, parlor you go to the more they will be willing to make it exactly how you like it.
If you ever get to the western edge of the City, I'd suggest Primos Pizzeria at 6223 W. Roosevelt Road. It's owned by my Mexican friend, Jacquim, who has worked at a variety of restaurants (incl Italian) in the past twenty years. The pizza is *fabulous*. Spicy? ask for some jalapenos! but their Italian sausage is pretty spicy already. They also make an awesome beef/sausage combo.
