Geja's has several seatings, like 7:00, 9:00, etc. You will not get seating at like 7:30. It is a wonderful restaurant, a throwback to the 70's, and very romantic. Typical is cheese fondue (hot cheese in a pot) that you dip bread or fruit into for appitizer. Meat or fish fondue for dinner (cooked yourself in oil at the table), and chocolate fondue for dessert (hot chocolate that you dip fruits into). I know there are other things you can order, but these are the most popular. It takes hours and hours to eat there. Be sure you like who you are with.
They also have a wonderful wine cellar, at reasonable prices.
If you don't get reservations, the Chinese restaurant right next door has wonderful Dim Sum. Been there, done that, I would go back.

Ambria in Lincoln Park (2300 Lincoln Park West) is a good bet for this. The food is French and they have a vegetarian degustation. This will get you to $120 easily.
I also like Trio up in Evanston, but that may be a bit of a hike if the requester is down in Hyde Park. Their cuisine is a fun mix of Italian, Thai, Indian and Japanese (and anything else the chef contrives). They had a great veggy tasting menu - a six course meal for about $70 each. I think you can also do an a la carte, which will be cheaper.
The best suggest is to pick up a copy of the Zagat guide for Chicago. Better yet, you can check out their on-line version at http://www.zagat.com/locale.asp?localeID=20.
