I will reiterate what the other person said about watching out for chicken broth and lard - but not all mex places use lard in everything- but keep it in mind if you need to take care to ask.

Are you ovo-lacto or will eggs be ok?

Around Schaumburg there is El Valle which is on W Algonquin Rd next to a Subway sandwhich place I think, on the left as you drive east. 2216 is the address (I have a menu pinned to my cubical).

I tend to get chicken enchilades (green goes well with chicken!) so I am not sure about whether you would successfuly find a veggie meal here.

Same goes for Mexico Uno - I am unsure of it's location - it's near the train tracks - if you go north on Meachem it turns into Plum Grove and then at some point you turn left and zig zag around. Mexico Uno.

I haven't gone there as much - one thing I ordered was ok but the next time I went it was eh so they're inconsistent as far as I'm concerned.

Chevy's can be a little overprocessed for me. I like the sweet corn pudding tho. When I go out on interview lunches I pick a place like Chevy's becuase they are halfway decent and not too frightening for someone who may be nervous from being interviewed all day.

In any case, I will repeat my recommendation of Taco Grande which is in Batavia - so it won't do for a lunch trip from Schaumburg unless you are having a very leisurely lunch. :)

One of the specials was Cactus enchilades - no meat. yum! I am not sure about the use of lard - but the people there are so friendly you could ask them about it. They may also be willing to experiment for you. You should go prepared for a long wait if you go during a busy time - they make everything fresh and so have to cook the whole thing.

OH! I just remmebered. if you go during early lunch ont he weekends they have a great torta (? sandwich?) which is eggs, avacado, beans(iirc), and these really wonderfully flavorful peppers (I'm not sure which kind). this also has no meat. but it does have eggs and you will have to ask whether lard was used for the beans.

Their chili rellenos are pretty decent. I don't order them often becuase they are often too much to eat - with the breading and hte cheese inside. very filling. Nice garlic taste in the sauce they are on.

Someone I know recommends another restaurant in quick driving distance from this one for better chilli rellenos but I can't remember the name.

anyway, I changed your title becuase you mentioned Thai but didn't put it in hte subject line - maybe start a new thread? I have been to some Thai places I like around here but I can't remember the names.
