Most restaurants in St. Barts are expensive (with wine it's easy to top $100/person). Most require reservations, either high or low season (in the high season it's so you can get a table. In the low season it's so they'll open).
Some of our favorites:
Au Port in Gustavia. French/creole.
Vincent Adam in St. Jean. French, with a good prix fixe menu.
Le Patio in St. Jean. Italian.
Le Toque Lyonnaise in Marigot. French/creole and very good.
Le Relais in Petit Cul De Sac. Creole.
Chez Francine in St. Jean (for lunch only, very casual).
Hostellerie de Trois Forces, Vitet. French/local. Hubert will do your hororscope, if you're into that sort of thing. You can swim between courses at lunch if you'd like.
Les Castelets is sometimes good and sometimes overpriced. I think that they were so thoroughly sacked by the recent hurricane that the report is they'll never reopen in any case.
Any of the 3 branches of La Rotisserie are good places for pastry/bread and charcuterie. I also like La Cave (Marigot) for wine and Le Gout du Vin on Rue Roi Oscar II in Gustavia for spirits (cognac/armagnac/rhum vielle). The grocery store across the street from Chez JoJo (_not_ the one at Chez JoJo) is pretty good.
