I have been to many fine dining restaurants (Canoe, Auberge du Pommier, Centro, North 44 etc). Canoe is one of my all time favourites. The food was great, and the view is incredible. Service was spectacular (I haven't really had bad service in any of the fore mentioned restaurants). They were very formal and accomodating, but weren't robots. The dress code is not too formal. I don't believe they require you to wear a jacket and tie, but I would call first to find out. I would recommend requesting a table by the window for a great view.
