Gina: Sonny Song the executive chef at Sorrentino's downtown across from the Westin has been serving buffalo for years. I have had buffalo strip loins, buffalo carpaccio, braised buffalo short ribs and ground buffalo in cannelloni or in wild game ragu. He is now featuring "Kobe beef" so do not know if that has meant less bison as a consequence but check their website or call them. I would be very surprised if Normand Campbell does not have buffalo on his menu. Normand's is located on Jasper Avenue near 116 th Street I think. He is well known for his wild game selections. Similarly, check with Hardware Grill. Larry Stewart emphasizes local cuisine so would expect he may have it on his menu. Similarly, Roary McPherson at the Hotel Mac or Jasmine at the Crowne-Plaza might be featuring it on their menus. I would be surprised if Tom Goodchild at the various Sawmills and The Moose Factory does not have a cut of buffalo on his menus. Peter Jackson at Jack's Grill has had it from time to time too. So Buffalo is definitely out there here in the "chuk" As far as recipes go it can be used instead of beef in just about anything depending upon the cut. There is likely an Alberta Bison Producers group if you do a web search that might assist. Bob Macdonald Edmonton, AB
