This information may not be all that useful unless you plan to head down where the air is fresh and dollar exchange rate is very favourable to Americans. Last weekend I ended up in Annapolis a small town in southern N.S. There's a restaurant called Newman's there which features a dish consisting of marinated salmon fillets barbecued on one side only. This results in a textural spectrum from crispy dark to sashimi-like. The rest of the menu is intriguingly unconventional e.g. cold beef tongue salad. Jot it down somewhere and come see the Ocean.

I'll certainly second the recommendation for Newman's in Annapolis Royal. I've been there mainly in the summer, but their menu changes with the seasons and has always had some *very* interesting things based on locally available ingredients. Last time I was there the prices seemed quite reasonable, too. And there are plenty of other reasons to visit the Annapolis region (Fort Anne, the Habitation, etc etc).
