There is an excellent vegetarian Chinese restaurant in the large Asian shopping center located at the southwest (logical) corner of the intersection of 237 and 880. Access is from the McCarthy exit off 237. I don't remember the exact name of the restaurant, but I think it is "Vegetarian <something>". If you enter the shopping center from the west headed toward the 99 Ranch Market, the restaurant is near the far left end of the U-shaped shopping center. I believe you can get vegan if you want. I have had a variety of non-vegan dishes that were quite tasty. Go early or late and carpool if you can because this shopping center has many restaurants and is a very popular place for lunch such that parking is at a premium.
