Good restaurants in Carmel & Monterey?

Try "Peppers" in Pacific Grove.  Great, heady food.  They like a little food with their capsicum, but it is not overspiced.  Right on the edge. If you are a true glutton for the hot stuff, they'll bring it on for you. It is off Lighthouse in downtown PG.  And, yes, nice interior as well.

Taste Cafe ... in Pacific Grove at the corner of Highway 68 and Prescott (up Forest Hill from downtown, across from the Safeway).  Excellent food, informal bistro-type atmosphere. Probably not "intimate" but definitely popular with locals and good.
