There are a great many of us that can tell you about Eastern NC
Barbecue. I was in Goldsboro eating at Wilber's last Friday. The whole pig is cooked over an open pit with charred hickory. (ie the wood is burned ahead to where it is not much more than charcoal) It is cooked open side down to start with. It is basted every hour or so with a vinegar and red pepper based sauce. Normal cooking time is between 18 and 22 hours. When done, the meat is pulled off and chopped. A little sauce is added then. If you can't taste the wood smoke, too much sauce was added. Normally served with cole slaw and hush puppies.

I'm not a big fan of Parkers. I like Bob Melton's in Rocky Mount much better. Seems like they add flour to the chopped Q at Parkers..
