If you want the best, try Roy's BBQ in Hutchinson. They are listed a book, (can not remember the name) that has the best BBQs across the USA listed in it. They are also known for having the 'world's smallest salad bar', there is also only one (big) table in the middle. They make their BBQ daily, and when it is gone, it is gone. Most days it all sold out by around 1:00PM or so. Their BBQ is very flavorful. It is not hot and spicy. When I used to live there, I ate there at least once a week. I think that my blood was about a 50-50 mix with their sauce. You can buy it separtely.
