In Columbus:

City BBQ, Henderson Road - best brisket you're going to find anywhere. Platter includes 2 sides for $6.

Stan's - Westerville Road at Morse Road, about 2 miles from I-270. - Home-style cooking in a place that's been around about 30 yrs. Dinners average $6.

I like your philosophy but I don't entirely agree. I like both the low and the high ends.. If you want to tie up as you're coming through, let me know.

Off I-10, between San Antonio and Houston, is Jerry Mikeska's BBQ (Exit 698, in Columbus). They've got excellent brisket, ribs, and banana pudding.

On I-10 in Houston (east of Beltway 8 and west of the 610 Loop), Goode Co. BBQ (Campbell Rd. Exit, I think) has awesome BBQ and pecan pie. One or two exits down from there is Dixie's Roadhouse, which has pretty decent roadhouse grub.
