I highly recommend Wilbur's in Goldsboro. Many people, including me, think this is the very best barbecue in NC. They still cook it slowly over wood coals. From 95 south, take highway 70 east to Goldsboro. Follow 70 bypass around Goldsboro. Wilbur's is on the far side of Goldsboro on the right side of the road just after 70 bypass rejoins 70 business.

It is perhaps 20 miles (one way) out of your way, but it really is worth it.

I ate there last summer, and can vouch for the authenticity of the Q. Wander around back and talk to the guys feeding oak and hickory to the pit.

But I have to say that I prefer my pulled pork to any that I had in NC (heresy, I know). All that I had in NC seemed overcooked to me, almost mushy. The taste was good, but the texture wasn't to my liking.

If I remember correctly, the pulled pork at Wilbur's isn't served on a bun, just piled on the plate.

More Heresy: Hush puppies should be served as a light dessert, not in lieu of a dinner roll.
