You can start with "Gentle Strength" Co-op in Tempe near Arizona State University - 234 West University Ave. (University & Mill). The co-op runs a deli where they serve vegan, vegetarian and macrobiotic dishes. If you are there on a Wednesday, you can pick up a free copy of the New Times newspaper. Near the back of the paper you will find listings of restaurants and descriptions. There are several Thai restuarants that are good about modifying the dish for vegan/vegetarian. Also many of the Mexican restaurants are now cooking with vegetable oil instead of lard. In this case, all you need to do is ask to eliminate the cheese in the dish. Also, there are several Greek, Middle Eastern and Indian restaurants that serve interesting vegan/vegetarian foods.

Try the In Season Deli at 414 N. Mill in Tempe (4 blocks north of Mill).

The previous poster mentioned Mexican, Thai, etc. There are several decent generic Mexican places--Garcia's and Macayo's come to mind immediately. For really good cheap Mexican, try Rosita's (Tempe & Mesa), Tee Pee (Phoenix), or Los Dos Molinos (Phoenix & Mesa). One of the best Thai restaurants in the valley is a tiny little place--the Siamese Cat at Baseline & Price in Tempe.

Happy eating!
