Peruvian Cooking Class
A Nuevo Latino class focused on Peruvian cooking. It covered a layered potato and tuna causa, a beef stew braised in cilantro and beer, crisp yuca fries with 2 dipping sauces (creamy huancaina and aji amarillo), and seared pork loin in a passion fruit and chipotle sauce. Aji amarillo, turmeric and cumin run through most of the dishes.
